I understand how good they are for me, but my tastebuds reject them. I've avoided them for years, and actually didn't even eat much fruit for a long time.
Now, fruit is on the menu, and veggies are sneaking their way in! My boyfriend Duke is starting to cook veggies at home, from zucchini to spinach to squash and more.
And as I promised him, I'm ingesting at least a bite of everything... in most cases more. While I choked down the first few attempts, I'm getting more used to the textures and flavors. I think I like zucchini well enough, but not cucumber! Spinach is more palatable because it takes on other flavors so well.
I've got a long road ahead of me, but I'm proud to be trying. Better late than never, right?
